Marinated and Grilled Lamb Ribs
    Beef Fillet in Blue Cheese Sauce

    Ingredients
     Serves 4

     1.2 kg (2.65 lbs) lamb ribs
     1 tablespoon coarse salt
     2 cloves garlic, minced
     2 lemons
     2 tablespoons mint, minced
     2 tablespoons parsley, minced
     600 grams (1.3 lbs) potatoes, scrubbed and peeled
     Olive oil
     Fresh rosemary
     Salt & pepper
 
 
 
    Preparation:

     Heat the oven to medium (350°F).

     Finely grate the fresh yellow part only of the lemon. Squeeze the lemon and reserve the juice.
     Make a marinade with the lemon juice, lemon zest, garlic, mint, and parsley.
     Rub the ribs with coarse salt and then marinate in the prepared mixture for 2 hours.

     Cut the potatoes into bite-sized cubes and toss with salt, pepper, olive oil, and fresh rosemary.

     Arrange the potatoes around the ribs on an oven rack. Roast in the oven for 35–40 minutes.
 
   Serving:

    Serve 5–6 ribs and a portion of potatoes with the salad of your choice.
